French toast grilled cheese
If cheese is your thing, my goodness you will love this recipe. French toast grilled cheese, I mean this is a pretty special, indulgent and delicious treat. Perfect for breakfast or a tasty lunch. I remember Nigella making parmesan french toast once and it was so so good. I thought, how can I build on this savoury french toast idea and make it even cheesier. The answer, make a cheese toasty or grilled cheese and then turn that bad boy into french toast. The french toast toastie was born. Full of oozy delicious mozzarella, mustard and a deliciously savoury cheese and thyme egg mixture. So yummy. You just have to give this one a try.
I mean, it’s probably not a ‘make everyday’ kinda thing, but it is oh so delicious, it’s amazing every once in a while. You’re worth it.
French toast grilled cheese
Recipe
4 slices of brown bread, sourdough or any nice bakery style bread you can find
1 ball mozzarella
½ tsp English mustard powder
Few tbsp dijon mustard
¼ tsp freshly ground nutmeg
3 large eggs
100ml milk
25g finely grated parmesan
10g finely grated cheddar
1 tbsp fresh thyme, chopped finely
Makes 2 generous sandwiches for hungry people
Method
In a large dish, crack the eggs and give them a little whisk.
Then add the milk, parmesan, nutmeg, mustard powder and chopped thyme and mix to combine. Put this to one side.
Cut 4 slices of bread. Brown bread, seeded or sourdough is great for this. Anything with a bit of bite and texture is amazing. If possible, it’s best if the bread is a little stale, so it doesn’t absorb the mixture too quickly, otherwise the french toast can get a little soggy.
Spread a thin layer of dijon mustard onto each slice of bread.
Cut the mozzarella into slices and lay on 2 slices of the bread, alongside the finely grated cheddar cheese. It’s best to put the mozzarella towards the middle of the bread, so that it doesn’t ooze out while you’re making it.
Put the sandwiches together and one by one dunk the sandwiches into the cheesy egg mixture. Let it sit for about a minute, then flip over and repeat for the other sandwich. Spoon on any extra mixture to the tops of the sandwiches and let it sit for a few minutes while you heat the pan.
Let’s cook this french toast grilled cheese
On a medium heat melt a small knob of butter and a little oil to cook each sandwich. Once the butter is all frothy, cook one sandwich at a time. Cook for about 2-3 minutes each side so that it is cooked through and golden brown.
I like to wipe the excess butter and oil from the pan before cooking the second, so that you can add in fresh butter and oil, so that the butter doesn’t burn.
Serve immediately with a salad. Alternatively, you can make these a little ahead and reheat them together on a lined baking tray in an 180 celsius oven for about 10 minutes. This really makes the cheese so gooey and satisfying. I’d definitely recommend it.
